This version pairs tart apples with sweet prunes, cinnamon, and a savory hint of rosemary (it’s subtle here, but you can substitute for thyme if you prefer). Your favorite pie crust recipe should work beautifully for this galette recipe. You can use store-bought pastry too. If you're not quite sure about handling pie dough, or you're in the mood for something a bit easier, a galette may be the answer. First you simply roll the dough in a circle or oval in a piece of parchment. Then add the filling in the center and flip the edges of the dough up around the filling.

Layering the filling in a galette:

A key to having a successful galette is piling the filling in the center. When using harder fruits like apples or pears, its often easier and more attractive to fan out the fruit so you can build out the center. It makes for easier slicing too.
