Onion Fritters (Onion Latkes) Recipe

- 3 large white onions
- 1 large red onion
- 1 leek
- ¼ bunch parsley
- ½ cup 62g flour
- ⅔ cup 111g semolina
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 crushed garlic cloves
- 2-3 tablespoons olive oil
- 3 medium eggs
- Vegetable oil for frying
- 1. Slice onions and leek. Heat olive oil over medium heat. Sauté onions for 10-12 minutes. Until soft and golden. Transfer to a large bowl. 2. Chop fresh parsley and add to the bowl. Add garlic cloves, eggs, semolina, flour, salt and pepper. mix well and set aside for 10-15 minutes. 3. In a large skillet heat oil over medium heat. Drop 1-2 tablespoons of batter into the oil, press lightly to flatten. Fry for 2-3 minutes on each side or until golden brown, drain on paper towels.
