Bunny Charcuterie Board (Breakfast) – Happy Happy Nester

A Bunny Charcuterie Board is a fabulous way to start a special holiday morning. It’s exciting to take the classic tastes of Easter and make them into something unique and entertaining. Start with a base of fluffy pancakes and shape them into cute Easter bunnies. Surround the bunnies with fresh fruit, eggs, cheeses, and more.

Easter Bunny Charcuterie Board

I made some delicious bunny pancakes this morning! I used my pancake batter recipe and used my adorable bunny pancake molds. They turned out so cute, and they tasted even better! My family loved them!

Well, I included those pancakes on my bunny charcuterie board and styled them with lots of breakfast side dishes.

And if you like my pancake molds Williams Sonoma has new ones, or you can buy some like the ones that I used for this post.

Let’s make this easy Charcuterie board that your family is sure to love!

Step 1 – Make all the Food:

  • Bunny Pancakes (Find Recipe below)
  • Scrambled Eggs
  • Bacon
  • Apple Slices
  • Dyed Hard-Boiled Eggs
  • Peanut Butter Balls (Find Recipe Below)

Step 2 – Make Scrambled Egg Bunnies

I have a recipe for super creamy scrambled eggs that might be of interest. Once you make the eggs place them in a small cup and begin to make the bunny. Trim the bacon in half and place them in the bowl for the two bunny ears. I placed blueberries for the eyes and a small slice of carrot for the nose. For the whiskers, I used slices of apples.

Step 3 – Make Cheese Flowers

Carefully slice a brick of cheese. Take your cheese slices and cut out flowers. Gently push the middle of the cheese to release the flower from the mold. If you’re in a hurry, buy the already-cut cheese slices.

Step 4 – Build the Board

  • Start with the edible grass first. It comes molded in a circle so I left that as a nest for some hardboiled eggs. Unravel one end to cover the rest of the charcuterie board.

  • Place your pancake bunnies on your board and add mini-chocolate chips for the eyes.

  • Add cheese flowers along the rim of the board.
  • Place sliced apples on the bottom sides of the charcuterie.
  • Add dyed hardboiled eggs.

Peanut Butter Balls Recipe

Ingredients:

Peanut Butter (chunky or creamy)

Powdered Milk

Honey

Old-Fashioned Oats

  1. In a mixing bowl, combine the peanut butter, powdered milk, and honey. Mix until well combined.
  2. Add the oats to the mixture and mix until everything is well combined and the oats are evenly distributed.
  3. Roll the mixture into small balls, about 1 inch in diameter.
  4. Place the peanut butter balls on a lined baking sheet and chill in the refrigerator for 30 minutes to firm up.
  5. Serve and enjoy! These peanut butter balls can be stored in an airtight container in the refrigerator for up to a week.
  6. Makes 20-24 balls.
  7. I rolled mine in granola.

Optional: You can also add other ingredients like chocolate chips, chopped nuts, or coconut flakes to the mixture for added flavor and texture. If the mixture is too dry, add a little more honey. If it’s too wet, add a little more powdered milk or oats.

Peanut Butter Balls

Here's a delicious little no-bake treat, peanut butter with honey and oatmeal.

This yummy recipe is very forgiving, and the pancakes come out perfect every time.

Ingredients

  • cups unbleached all-purpose flour
  • cup granulated sugar plus 1 tablespoon
  • ½ tbsp baking powder
  • ½ tsp salt
  • cups buttermilk
  • 3 tbsp unsalted butter melted and cooled, plus more butter for cooking
  • 3 eggs large eggs
  • ½ cup milk as needed to thin batter

Instructions

  • Mix your dry ingredients in a large bowl.

  • Melt the butter and let cool. Whisk eggs in another bowl and add butter to them. Although, my husband says that whether he uses cool or warm butter, it still clots in the egg mixture. He has discovered that this step doesn’t seem to affect the outcome of the pancakes.

  • Combine the dry and egg batter.

  • Cover and rest the batter in the refrigerator overnight. This creates a smoother batter, but the taste difference isn't noticeable. So, if you don't have the time to refrigerate, that works fine too.

  • The exciting thing about this recipe is that mixing the batter doesn’t affect the pancakes.
