Ingredients:

Air Fryer Coconut Shrimp, ingredients

 1 lb or 450g large shrimp, peeled and deveined
1 cup or 170g shredded coconut (sweetened or unsweetened, depending on preference)
½ cup or 60g all-purpose flour
2 eggs, beaten
Salt and pepper to taste
Cooking spray or oil spray

Instructions:

  1. Preheat your air fryer: Set it to 400°F (200°C) and let it preheat for a few minutes while you prepare the shrimp.
  2. Pat the shrimp dry with paper towels to remove excess moisture. Season the shrimp with salt and pepper according to your taste.
  3. Prepare the coating station: Set up three shallow bowls. In one bowl, place the flour. In another bowl, place the beaten eggs. In the third bowl, place the shredded coconut.

4. Working with one shrimp at a time, dredge it in the flour, shaking off any excess.

5. Then, dip it into the beaten egg.

6. Finally, coat the shrimp in shredded coconut, pressing gently to adhere the coconut to the shrimp. Repeat this process with the remaining shrimp.

7. Arrange the shrimp in the air fryer: Lightly spray the basket with cooking spray or oil spray once all the shrimp are coated. Depending on the size of your air fryer, you may need to cook them in batches.

8. Place the basket in the preheated air fryer and cook the shrimp for 6-8 minutes, flipping them halfway through the cooking time.

Cook until the shrimp are golden brown, crispy, opaque, and cooked through on the inside.

    Serve: Once cooked, remove the shrimp from the air fryer and serve immediately with your favorite dipping sauce, such as sweet chili sauce, mango chutney, or a simple cocktail sauce.

    Alternative Cooking Methods

    Oven Bake

    Cook at 190 C or 375 F. Line a baking tray with foil and lightly brush a little olive oil (to stop from sticking later). Add the shrimp and spray or drizzle some olive oil over the tops of the shrimp. Bake for 8 - 9 minutes.

    Deep fry

    Heat up the oil in your fryer/pan until it reaches 180 C or 350 F. Carefully place each shrimp into the hot oil and cook for 2 - 3 minutes until golden brown. Drain on kitchen paper before serving.

    Flavor Suggestions

    • Add some cayenne pepper to the shrimp before the flour coating
    • Marinade the shrimp in lemon zest and a squeeze of lemon, and swap the black pepper for lemon pepper, then flour as normal.
    • Swap the shredded coconut for panko breadcrumbs
    • Add a pinch of chili flakes or mixed herbs to the flour
