About this galette recipe, and the exceptional filling:

The beauty of a galette is its rustic nature. They are a simple, self-contained pie, filled with fruit and spices and just about anything else you like. This version pairs tart apples with sweet prunes, cinnamon, and a savory hint of rosemary (it’s subtle here, but you can substitute for thyme if you prefer). It’s humble enough for a weeknight but holds up at any dinner party.
Choosing a crust for your galette:
Your favorite pie crust recipe should work beautifully for this galette recipe. You can use store-bought pastry too. We use our Best Gluten-Free Pie Crust recipe, which has a touch of cream cheese that adds body and flavor to the dough. If you want a gluten-free and dairy-free crust for your galette, try Sarah's crust recipe.
If you're not quite sure about handling pie dough, or you're in the mood for something a bit easier, a galette may be the answer. First you simply roll the dough in a circle or oval in a piece of parchment. Then add the filling in the center and flip the edges of the dough up around the filling.

The inspiration for this galette recipe is a classic flavor combination.
Not sure about apples + prunes? Many cultures use the combination - and dried fruit in general - more than we do in the U.S. My friend Irvin created this Apple + Prune Slab Pie, which served as the inspiration here, but you can find tons of pastries using this combo. Here are a few more:
Layering the filling in a galette:
A key to having a successful galette is piling the filling in the center. When using harder fruits like apples or pears, its often easier and more attractive to fan out the fruit so you can build out the center. It makes for easier slicing too.
