About the Recipe

Air bandung, sirap bandung are different names for this drink. 'Air' means water and sirap is syrup in regional Malaysian dialect. One of the key ingredients in rose syrup and is easy to prepare at home. However, nowadays syrup is easily available in most ethnic stores.

In Indian subcontinent, Rooh Afza is the closest to rose syrup used in bandung. It is available online and also in most Indian stores, especially during the month of Ramadan. I use rose syrup to prepare rose flavored yogurt, milk shakes and gulab sharbet.

There are many ways to prepare bandung. You can prepare with milk or condensed milk. If using latter, skip sugar as it is already sweet. Some recipes also call for soda instead of water.

Quantities of all the ingredients can be adjusted to once taste. I use 2 tablespoons of condensed milk and it is a little too sweet for my husband. Hence I use half the quantity for him.

Ingredients

This is a 3 ingredients recipe; rooh afza, condensed milk and water. There are many versions to the recipe that call for additional ingredients. I shall mention those in variations section.

  • Condensed milk - is the sweetener and the diary that gives the creaminess to the beverage.
  • Rooh Afza - is the commercial version of rose syrup. It gives both flavor and some sweetness to the drink. It has additional ingredients that may not be used in Malaysian rose syrup, but works just fine in this recipe.
  • Water - I use chilled water and skip ice cubes. Feel free to add some ice cubes as well when serving.

Instructions

In a bowl, take water, combine condensed milk ('1' in below collage) and roohafza (#2). Whisk or mix until condensed milk dissolves in water (#3). Chill and serve (#4) or add some ice and serve.

Variations

  • There are many variations to this drink. You can make simple sugar syrup and replace it with condensed milk or use sugar directly.
  • Skip condensed milk and use evaporated milk instead. Use 1 part evaporated milk and 2 parts water.
  • Replace water with milk and skip condensed milk. For sweetness add simple syrup or sugar.
  • Replace water with soda or use combination of soda and milk.

FAQ

Can I use rose water instead of rose syrup?

No. Though both are prepared using rose petals, you can use one for the other. Rose water is just rose flavored water used for aroma where as rose syrup has sugar in it.

Can I make rose syrup for bandung drink at home?

Yes you can, if you can procure all the ingredients. One of the ingredients are pandanus leaves which are difficult to procure in many parts of the world. One substitute is kewra water which is infused with pandanus leaves. If you can not find either, rose syrup with pandanus or kewra water also works for bandung drink.
