Beef Enchilada Dip | Dinners, Dishes & Desserts

This Beef Enchilada Dip is loaded with flavor, cheesy, gooey and oh so delicious! A hearty appetizer that will disappear in no time!

I am pretty sure I could make a meal out of appetizer and dips pretty much every night and be happy. Especially hearty dips like this beef enchilada dip. Pizza Monkey Bread and Air Fryer Potato Skins are party favorites that are always a hit. And this enchilada dip is no different.

Mexican flavors of some of my favorite, it can be in the form of Taco Dip or Sour Cream Enchiladas or even Tofu Tacos, I want them all! There is just something about the seasonings and melty cheese that gets me every time!

This beef enchilada dip is super easy to make and loaded with flavor. Enchilada sauce seasons the meat and gives it great flavor. Plus all the cheese make it gooey, cheesy, and deliciousness in every bite!

What You’ll Need

  • Ground Beef – you can use ground turkey as well if you perfer
  • Onion
  • Enchilada Sauce – store bought or Homemade Enchilada Sauce works great
  • Diced Green Chiles
  • Cheddar Cheese – ideally you want to shred your own cheese for the best taste and texture.

And the best thing is you can then top it with whatever your favorite taco toppings are to really bring it all together!

  • Diced Tomatoes
  • Sour Cream
  • Jalapenos

How To Make Beef Enchilada Dip

  • Brown the ground beef and onion together, breaking apart until the beef is cooked and the onions are soft. Drain away any of the excess grease.
  • Mix in enchilada sauce, green chiles and half of the cheese until everything is melted and combined.
  • Pour the beef mixture into a small baking dish and top with the remaining cheese. Bake until hot and bubbly.
  • Remove from the oven, top with your favorite toppings, and serve with tortilla chips.

Recipe Tips & Tricks

  • You can really get creative with how you make this dip. Add refried beans or black beans in with the meat, add taco seasoning for more flavor, use ground turkey or ground chicken to mix up the meat.
  • Homemade Tortilla Chips make an excellent dipper.
  • If you are using ground beef, make sure to get rid of any excess grease after you cook the meat. You don’t want your dip to be greasy.
  • Shredding your own cheese will make all the difference. It will melt smoother and better than the pre-shredded kind.

Storage

Leftover Beef Enchilada Dip is great leftover. You can store in an airtight container in the fridge for up to 3 days. Reheat in the microwave or in the oven until it is hot and bubbly.

  • Preheat oven to 350º F.

  • In a large skillet brown ground beef and onion together over medium high heat, breaking apart. Cook until beef is cooked through and onions are soft. Drain any of the fat away.

  • Mix in enchilada sauce, green chiles and 1 cup cheddar cheese. Pour into a pie plate, or other oven safe baking dish. Top with remaining 1 cup cheese.

  • Bake for 15-20 minutes until cheese is bubbly.

  • Serve immediately topped with desired toppings.
