If you're a waterfowl hunter like me, this recipe proves once and for all that wild goose doesn’t have to be ground into jerky. It can shine, front and center, in a Chinese stir fry packed with crisp green beans and a rich, savory sauce.

  • Your green beans, trimmed and halved.
  • Your garlic and ginger, minced.
  • Your sauce and slurry, whisked.

How To Make A Goose and Green Bean Stir Fry

1. In a medium bowl, combine the goose breast strips with the marinade ingredients: water, cornstarch, oil, and oyster sauce. Mix well. Let it rest while you prep the other ingredients.

2. In a small bowl, stir together the chicken broth, soy sauce, sesame oil, sugar, and black pepper. Set it aside.

3. In another bowl, whisk together the cornstarch and water to make a slurry. Set that aside too.

4. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat. Add the green beans. Stir-fry for about 5 minutes, letting them blister and brown slightly. Remove them from the wok and set aside on a plate.

5. Reheat your wok over high heat. Add the remaining 1 tablespoon of oil. Spread it around the pan. Add the goose in one layer. Sear for 1 minute per side. Let it brown and develop some color.

6. Add the garlic and ginger. Stir-fry for 30 seconds. Breathe in that aroma. You’re doing it right.

8. Pour in the chicken broth mixture. Let it sizzle and come together. Add the cornstarch slurry directly into the liquid. Stir-fry for 15 seconds to thicken.

9. Add the green beans back in. Toss everything together and stir-fry for another 30 seconds over high heat.

10. Sprinkle with sesame seeds if desired and serve immediately with cooked rice or noodles.
