To make them: warm oil and butter in a large stockpot or Dutch oven over medium-low heat. Then you add the onions to the pot and cook for 20-25 minutes, stirring occasionally. Add some thyme sprigs, turn the pan lid slightly and throw the whole thing in a preheated oven for an hour. Stir occasionally to ensure the onions aren’t sticking and to evenly caramelize them.
