Fully Loaded Baked Potato Recipe

Loaded Baked Potato Recipes – perfect baked potatoes that are topped with cheese, bacon, sour cream and chives! A great side dish or even dinner idea! 

When you go out for a steak dinner, what do you get for your side dish?  Baked potatoes are a pretty classic choice. And then they load it up with all the best toppings! Butter, Cheese, Sour Cream and more.

Well you don’t have to wait until the fancy steak dinner to make them at home! And you can totally make them a meal, not just a side dish.

The best thing is these loaded baked potatoes can totally work for a baked potato meal as well! It is all in your choice of toppings how filling you can make these to take them from side dish to main course.

This is a picky family approved dinner, because everyone can top with whatever they like! You don’t have to worry about one not liking cheese or one not wanting sour cream. Just set out the topping choices and let people make their own!

  • Russet Potatoes – I like these best for baked potatoes, they are nice and fluffy on the inside.
  • Olive Oil
  • Salt & Pepper
  • Butter
  • Cheese
  • Bacon
  • Sour Cream
  • Green Onions/Chives

The hardest part about this is really picking what you want on top! Making baked potatoes could not be any easier! I like to make Air Fryer Bake Potatoes because they are faster than the oven and you get the crispy skin. But you can use whatever method you prefer.

How To Make A Loaded Baked Potato

  1. Bake Potatoes. No matter what method I like to pierce the potatoes with a fork, rub with olive oil and season with salt and pepper. Then you can cook in the Air Fryer, the Oven, make Grilled Baked Potatoes if you are already grilling, or you can even use the microwave.
  2. Get Melty Cheese. Once the potatoes are fully cooked, I like to cut open the baked potatoes pretty quickly and top with butter (if using) and cheese immediately. You can even then pop them back in the oven for a couple minutes to help melt the cheese. But usually the heat of the potato does a great job of melting the cheese, depends on how much you add!
  3. Load Up Toppings. Next you load it up with your favorite toppings! Loaded potatoes can make such a great dinner. Top with cheese and crispy bacon for protein. Then you can add sour cream and chives as well. Easy, delicious, and the whole family will love them.

What To Put On Loaded Baked Potato

So many different ideas!  You can turn a baked potato into a full dinner depending on how you top it.  Here are some great potato dinner ideas. 

  • Turn it into a taco – taco meat, cheese, salsa, guacamole, tomatoes, jalapenos
  • Use leftover chicken or pulled pork coated in barbecue sauce and top with cheddar cheese
  • Mix chicken with buffalo sauce and ranch dressing
  • Leftover Crock Pot Chili with cheese and sour cream 
  • Chicken, broccoli and cheese
  • Your favorite pizza toppings with pizza sauce and mozzarella cheese

What Goes with Loaded Baked Potatoes

You can serve these as a main dish, or if they are a side, they will go with just about anything! You could even use sweet potatoes like these Taco Sweet Potatoes for a slight twist.

You really can serve a small loaded potato with just about any meat for dinner.  And then make a salad or your favorite vegetable if serving as a meal.  You really just want to avoid pasta or rice to go with it. 

  • Preheat oven to 375º F.

  • Using a fork prick holes around the entire potato. 

    4 large russet potatoes

  • Rub each potato with olive oil and season with salt and pepper.  Place on a baking tray and bake for 60-75 minutes. Baking time will depend on how big the potatoes are. 

    1 Tablespoon olive oil, 1 teaspoon salt, 1/2 teaspoon black pepper

  • Slice the top of the baked potatoes open. Top each potato with a little butter and 1/4 cup of cheese. Place back in the oven if you would like to completely melt the cheese. 

    1 cup cheddar cheese, 2 Tablespoons butter

  • Sprinkle each potato even with the crumbled bacon, spoon on a dallop of sour cream, and sprinkle with chives. 

    8 slices bacon, 1/3 cup sour cream, chives or green onions

  • Serve immediately

Can use air fryer to bake the potatoes 400º for 30 minutes, flip, cook about 15 more minutes depending on the size of the potatoes
