Gingerbread Truffles

Now that we have all that out of the way, let’s talk about these delicious truffles.

We make this every holiday several times. We almost always have a tin full in the refrigerator, but they can go so much further than that.

Pop them in a gift box or jar with ribbon and a tag, and they make a delicious edible gift for any holiday.

If you want to use milk chocolate chips, or dark chocolate chips – that’s up to you.

We change ours up and sometimes even use white chocolate to get a different flavor.

But I think that’s why this recipe is so much fun – it’s so easy and can be changed up easily.

Wondering how to store chocolate truffles properly?

Here are a few tips for storing truffles safely.

  • Keep them away from sunlight.
  • Keep them sealed tightly in an air tight container. A zip top bag is also acceptable.
  • Store at a cooler room temperature, however, an airtight container in the refrigerator works best.
  • If they are made with fresh cream (as these are), they should always be stored in the refrigerator.

Recipe for Gingerbread Truffles

Deliciously spiced, rich chocolate truffles topped with ginger snaps, these Gingerbread Truffles are incredible.

Calories 119 kcal

Truffles:

  • ¾ cup heavy cream
  • 1 ¾ cups chocolate good quality
  • 1 Tablespoons ground ginger
  • ½ Tablespoons ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg

Coating:

  • 10 ounces chocolate chips
  • 5 teaspoons shortening

Topping:

  • 1 cup ginger snaps crumbed
  • Heat the heavy cream in a saucepan for a few minutes. Don't allow it to boil, simply get it hot. Turn off heat.

  • Add the chocolate and allow it to sit for about 1 minute. Add all of the spices and begin stirring until completely melted and smooth.

  • Place in refrigerator for 3 hours to chill until set.

  • When chilled, use a mini ice cream scoop or melon baller and scoop out the chocolate and roll between your hands to form balls. Place on parchment paper until you finish making all the balls.

  • In the microwave, melt the chocolate chips and shortening. Stir until smooth.

  • Place a toothpick into a ball and dip into chocolate allowing the excess to drip off.

  • Place on parchment paper to dry while continuing with remaining truffles.

  • Sprinkled crushed ginger snaps over the top before completely dry.

  • Store in an airtight container in the refrigerator.
