Will is still going strong with playing every sport known to man. I’m not kidding – hockey, basketball, football, soccer, track & field, lacrosse, baseball. I think I named them all?!

Dressing consistency

I do not like chunky dressing. There – I said it. Dressing consistency is extremely important. I think it makes or breaks a salad.

But, then this dressing is made with cottage cheese (which is obviously chunky). By blending the cottage cheese, the dressing becomes extremely smooth, giving us the perfect dressing consistency.

I want to use this as a dip. What should I do to thicken it?

Don’t add any water! With the ingredients listed, the dressing will come out a little thicker. This consistency might be perfect to be used as a dip. Otherwise, you can add additional cottage cheese to thicken it a bit.

If I prefer a thinner dressing, what should I do?

In this case, add water! Slowly add water (and blend), until you have reached the desired consistency. Make sure to taste and season it after blending.

  • ½ cup cottage cheese
  • ½ cup avocado oil
  • 1 avocado
  • 1 bunch cilantro
  • 2 tbsp diced white onion
  • 1 lime juiced
  • salt to taste
  • water to achieve desired consistency
  • In a blender, add the liquid ingredients.

    ½ cup avocado oil, 1 lime

  • Add the remainder of the ingredients and blend until you have a smooth texture.

    ½ cup cottage cheese, 1 avocado, 1 bunch cilantro, 2 tbsp diced white onion, salt

  • If desired, add water and blend until desired consistency has been reached.
