Sour Cream Spread – MySpicyKitchen

I made sour cream spread for the tomato basil bread I baked for day 1 of Tame the Yeast theme. I did not have any vegetables that day so made a simple sandwich by spreading this on the tomato basil bread. Some cold cut meats such as ham, salami or prosciutto would make excellent meats for this sandwich or some leafy vegetables such as spinach or arugula.

My first preference of spread for this basil tomato bread was with ricotta cheese. I thought I had some ricotta in my fridge and without checking the tub, I went ahead with the preparation. While I was whisking the spread, I wondered by my ricotta cheese was so smooth and never remembered it to be so soft. I made the spread, took some pictures, had my lunch and when I was cleaning the kitchen, I realized I used sour cream and not ricotta cheese! Duh! Since it tasted fine and since I had very little bread remaining, I decided to use this spread recipe instead of making the spread again with ricotta cheese. One of the rules for this theme is, all the spreads, soups or any food that is served with the tame the yeast bread has to be in the picture. Since I had just one slice of bread, I did not bother to make the another spread with ricotta cheese, this time with ricotta and not sour cream 😉 .

This spread is such an easy recipe and one can use spices of their choice. I used some pepper powder, salt, garlic, fresh parsley and couple of drops of lime juice. The spread was white and I was tempted to add a pinch of chili powder or some tomato sauce to change the color. Yet, I did not want to add too many ingredients and change the taste and flavor of the spread. I wanted to keep it simple as the bread itself was quite flavorful. However, after taking the pictures I added couple of drops of chili garlic sauce which added some extra flavor and also gave the spread an orangish color. Some tabasco sauce would have been just perfect and as I was out of it, I used Sriracha chili garlic sauce instead. Wish I had thought about the sauce before clicking as that hue of orange would have looked great in this moody shot. I am trying to manipulate light and take some moody pictures. Sandwich Spread, Sour Cream Dip, Blogging Marathon

Ingredients:

  • 4 tbsp. Fat Free Sour Cream
  • 1 tbsp. Fat Free Yogurt (Greek yogurt would work perfect)
  • Dash of Black Pepper, about 1/16 – ⅛ tsp. (adjust to taste)
  • ¼ tsp. Salt (adjust to taste)
  • ¼ tsp. crushed Garlic
  • 2 drops Lime Juice (opt.)
  • 1 tsp. Extra Virgin Olive Oil
  • 1 – 2 Dashes of Sriracha Chili Garlic Sauce or Tabasco Sauce
  • 1 – 2 tsp. Parsley chopped (can use cilantro, basil or any herb of choice)

Preparation:

  • Whisk all the ingredients except parsley together. Add parsley and mix it.
  • Use it as a spread for a sandwich or as a dip.
