Tips, Suggestions and Substitutions

The higher the quality of the chocolate, the better these turn out and the more they taste like actual thin mint cookies.

Same goes for the peppermint extract. At any rate, these are delicious even if you do use lower quality ingredients. Period.

We make these with both butter crackers and shortbread cookies. We find that the butter cookies taste more like thin mints but the shortbread cookies have a unique and delicious peppermint flavor.

Substitutions are not recommended with these, but we do have some suggestions for topping them to make them a little different each time. Try topping each cookie before the chocolate hardens with one of these:

Easy Almost Homemade Thin Mint Cookies

Almost Homemade Thin Mint Cookies are easy and make a great snack and a fantastic gift idea! They taste so much like the girl scout cookie – it's shocking!

  • 4 ounces dark chocolate high quality
  • 2 drops peppermint extract to taste – add to and test
  • 12 butter crackers circle shape
  • Using a double boiler, melt the dark chocolate until smooth.

  • Add a drop or two of peppermint extract, stir well and taste.

  • If it needs a little more mint, add a drop at a time stirring between each addition until you get the desired taste.

  • Dip the crackers in the melted chocolate, allow the excess chocolate to drip off. I used a mini pair of tongs for this process.
  • Place on a sheet of wax paper or parchment paper and refrigerate for about 20 minutes to allow the chocolate to set.

If you freeze your gs cookies, try freezing these! They are amazing!
